Zucchini Fritters



A new fritter recipe that turned out really tasty!

two zucchini, finely chopped
a bit of red onion, finely chopped
one cup freshly grated parmesan cheese
three eggs
two cups of flour
one cup of milk
salt, pepper, onion powder and garlic powder to taste

Mix well.  Drop by rounded spoonful and fry slowly in a pan with about 1/4 inch of oil.  Flip as you would pancakes.  Serve hot!
