Ratatouille

Every Tuesday and sometimes on Saturday we go to the local Farmer's Market.
This passed Tuesday I got some beautiful eggplant, peppers, zucchini, tomatoes, parsley, and purple basil.
Ratatouille served with a loaf of fresh garlic cheese bread.
