A Peasant's Lunch

Sometimes I love to just have something very simple, yet hearty for lunch.

Today we all shared a loaf of homemade bread, accompanied by some humus.

Simple Bread

(This is a recipe I've adapted from Laine's French Bread.)

1 1/4 cup warm water

2 heaping teaspoons brown sugar

1 T. olive oil

1 1/2 teaspoons salt

2 cups unbleached white flour

1 1/2 cups whole wheat flour

3 teaspoons yeast

Place all ingredients in the bread machine and set to the dough cycle. When cycle finishes remove dough from machine. Shape. Let rise for 20-30 minutes. Bake at 425F for 20 minutes. While still hot from the oven brush the top with butter.

Variations:

Place in standard loaf pan, place on baking sheet for french bread shape, make rolls, bread sticks, etc.

Add Italian herbs to ingredients. Sprinkle top with garlic salt after brushing with butter.

Use your imagination!
