Eggplant Mozzarella Sandwich

I love a good sandwich. And this was a good sandwich! And being that today was wicked hot, it was nice to not slave over the stove. I served it with a Caesar Salad. A very nice and light summer dinner.

Yummy! Good for you wanting to be a chef, I hate cooking. Other people make it look effortless, I would rather bake (cakes, cookies,etc) Thanks for entering the drawing, Good luck!

I love eggplant sandwhiches. I'm just back to this site for the second time... i still don't see receipes. what did you put in the sandwich exactly? Do you saute the eggplant?

Dredge the eggplant in flour and fry in oil until browned. Then season it with coarse salt and freshly ground pepper.

Brush french bread slices with olive oil. Layer eggplant, roasted red pepper (I used some from a jar), and mozarella. Top with another piece of lightly oiled bread. Place under broiler until toasted and cheese is melted.

That's it! :-)

I'll have to make some for lunch tomorrow with the homegrown eggplant I picked today. Yum yum. I have another recipe I'll have to dig up and post.
